Fresh mushrooms are an ingredient in numerous recipes. Because they are usually stir-fried and cooked briefly, until just barely tender but not soft, canned mushrooms are not an appropriate subsititute. "Fresh mushrooms" refers to cultivated, commercially available mushrooms, not to wild mushrooms (which might be poisonous).

Mushrooms are a product of the earth and as such need to be cleaned well before they are used. Although some cooks argue that mushrooms must be wiped clean with a damp cloth and should never be washed, washing the mushrooms under running water is far easier. Loosen the dirt with your fingers, wash off each mushroom, drain the mushrooms, and pat dry.
